What is Mala? Mala is a descriptive word for a flavour profile we do not have in the west. Its a tingly, spicy and absolutely delicious taste that will keep you coming back for more. Mala is found in hot pot, hand pulled braised beef noodles, Chinese BBQ and many stir fry dishes including Gong Bao Chicken. 

 

Our Sichuan Mala spice was discovered in a market in the capital city of Sichuan, Chengdu. In this busy market we found many spice vendors, but uncle Cheng had the most delicious and some would say "famous" spice in the city. After time and building trust we got this incredible recipe so that all of you can experience what we call "the worlds most delicious cuisine". 

 

Try it on everything! BBQ, noodle soups, stirfry, marinades, roast vegtables, honestly its an all in, one hit wonder! 

 

Ingredients: Sichuan Chilies (Er Jing Tiao, Facing Heaven, Tianjin) Peanuts, Sichuan Pepper, Salt, MSG (Monosodium Glutamate), Chinese 5 Spice ( Star Anise, Sichuan Pepper, Fennel, Cloves, Cinnamon), Sesame Seed

 

A Note on MSG (Monosodium Glutamate): We here at the Spice Merchant take pride in not using fillers or junk in our spice. However, what we value the most is tradition. Our recipes are meant to transport you back to your favourite market from your trip abroad. This is why we chose to include MSG in this particular spice. Without it, it is not authentic. Our MSG we choose to use is made in Japan, it is derived from Cassava and sugar cane, making it a natural product.
