Deng long jiao, or lantern chilies, are fat and round and moderately hot. These are deep-red in colour with fresh, earthy and fragrant tones. They are used to bring a visual wow to dishes such as dry pot and Chongqing chicken (la zi ji).
Some famous Sichuan chefs use them in their mix of chilies for chili oils. our favourite is with chicken stir fries, hot pot and slow cooking!
