When I traveled across Afghanistan I was introduced to a whole new world of spice. Being a crossroad of the Silk Road, Afghanistan has had a unique opportunity to mix varied spices from East and West.
The go-to food across Afghanistan has always been Kabuli Pulao and Kebab, both of which call upon this Afghan favorite. It isn’t uncommon to see this spice next to the salt and pepper to be used as an additive on the tabletop in most Afghan restaurants as well.
The best way to utilize Afghanistan Char is to add it in a curry/rice dish or to fry it with vegetables. My mother is a huge fan of this spice and loves to cook it with Zucchini adding a bit of salt and butter alongside the vegetable. I personally add it to my Kabuli Pulao which is rice cooked with Afghanistan Char, Raisins, Nuts, and chicken broth.
